Do you have an official compatibility matrix that shows Angular support for each Handsontable version?
I’m looking for the most recent Angular version that will work with Handsontable 12.1.2.

do not not have a similiar page (yet). But it seems that it might be 15.x
We had issues with Angular 16. Those issues were solved in Hadsontable v13.0.0 here https://github.com/handsontable/handsontable/pull/10396 since then users we also checked Angular 17 that works well with our demos.
